For example, the poutine ribs, which have the perfect ratio of cheese curds to gravy to tender meat.
It’s also a nice nod to the dish you don’t end up eating if the temperature isn’t quite right. But you should definitely eat yours before the space gets too crowded – it can get pretty warm.

There are some things in this world that have an immediate comforting effect. In this case, though, I’m referring to the opening notes of “The Rainbow Connection” played by Kermit the Frog at the beginning of The Muppet Movie—not anything that comes in poutine form.
The second I see that menu, I take a deep breath and know that for the next hour, I get to sit in a warm, content state and wonder things like, “But why smoked meat spaghetti gratin?” and “Was there really a market demand in Trois-Rivières for steak submarine?” The poutine here makes me feel similarly, especially the classic version at Ma belle province chez Edem. It comes with generous portions and that mysterious squeaky cheese curds, and just the smell of the gravy makes me feel f*ckng great.
