There isn’t one specific dish we recommend here because not only are they all good, but Phở Gabo is about embracing the full Vietnamese experience in a warm, welcoming space. There really isn’t a wrong occasion to grab a flavorful, satisfying meal from Phở Gabo, except if you’re looking for late-night dining because they maintain that calm, class-act atmosphere throughout their hours.

Pho Viet is one of the most authentic Vietnamese spots in Hillsboro, and the most reliable pho destination on the west side of metro Portland.
The pho isn’t quite worth braving a bland broth experience, so avoid ordering it if you prefer bold flavors. Instead, come on a busy weekday when the broken vermicelli and salad rolls are fresh, there’s quick service, and everyone acts like they’ve discovered their new favorite lunch spot.
Saigon Bowl

Saigon Bowl is a Vietnamese restaurant that has been serving the Hillsboro community for years. Before terms like banh mi and pho became part of Oregon’s culinary lexicon, this was one of the reliable spots in Washington County that offered classic dishes like Luc Lac, Drunken Crispy Chicken, Coconut Shrimp, and Banh Xeo—all of which remain consistently satisfying here. It’s housed in a clean, unassuming storefront that gives very straightforward neighborhood vibes in the best way possible.

This Hillsboro Vietnamese spot serves banh mi every day from opening to closing, but lunchtime is the best time to come for the freshest bread and most vibrant ingredients. The clean dining area has a carefully arranged display of cherry blossom branches over the light wooden counter, where you’ll see a mix of students grabbing quick bites and regulars settling in for a sandwich, some pickled veggies, and a chat.
CM Banh Mi serves excellent vegetarian banh mi with a perfectly crunchy loaf and flavorful tofu, along with standout wonton soup, which features a light, savory broth concealing tender dumplings and fresh herbs.
Pho Tango Bistro

You’ll find Pho Tango Bistro tucked in a convenient strip near the fitness center and Fred Meyer with plenty of parking. The restaurant is a straightforward, mostly dine-in spot with quick service even when busy. Pho Tango Bistro is a Vietnamese restaurant, a reliable and popular choice in Hillsboro. They have classic dishes like fresh spring rolls and chicken curry. But you’ll still find some standout specialties here too, like the perfectly balanced pho and top-tier vermicelli.
That, along with a kids’ pho option, is our go-to order here.
Vivi’s Vietnamese Noodle House

Vivi’s Vietnamese Noodle House is not just the best option outside Portland or Beaverton (the Vietnamese epicenters of the metro area). No, saying that would downplay how good Vivi’s is in its own right. They make solid versions of not only spicy pho with beef and summer rolls—but also lemongrass tofu and potato pancakes.
Like most noodle houses, this is a very casual spot with a clean, classy dining room, but most people stick to quick service for their divine dishes like the vermicelli bowls and Vietnamese iced coffee.
Pho Kita Steak & Ribs

Pho is Pho Kita Steak & Ribs’ specialty. Steaming bowls are placed on most of the tables at this cozy cafe (which is a popular spot in the Portland area). The pho—available in generous serving sizes—comes with perfectly cooked noodles and flavorful broth. While pho is the main reason to come here, they also make good Wagyu and NY strip steaks if you want to have a varied spread of Vietnamese-inspired food on the table.
Pho Hanoi

If you think authentic Vietnamese food can’t be found outside of Vietnam, then you need to visit this spot in Hillsboro. It’s not only one of the best Vietnamese restaurants in Oregon, but it will remind you of any of Hanoi’s traditional pho shops. It even has outstanding condiments. Except, the portions are all generous and the atmosphere is entirely cozy and welcoming. They make a good beef pho with amazing noodles and plenty of protein that does not disappoint.
But we love their vermicelli salads the best, which are delicious and generously portioned, easily feeding multiple people and competing with the best versions in town.
Pho Saigon Bistro

A bowl of steaming pho occupies 90% of the tables at this Hillsboro restaurant. Take it as a sign to also order the lemongrass pork bahn mi. But before that, savor the complimentary cup of warm tea, which they always give you even if it’s not a special occasion. Aside from the exquisite pho broth, the Vietnamese restaurant makes great gluten-free options, fresh noodles, and tender meat dishes. It’s a place you can count on for a last-minute lunch or dinner.
Show up in your weekend casuals and you’ll still be treated with kindness by the accommodating staff. Plus, they offer reliable take-out service in case dining in is too much for you.
Chopstix Grill

Hillsboro’s many Asian restaurants can start to blur together after a while. But true to its name, this little spot is the best Thai-Vietnamese grill in town. What separates it from the rest is how well they balance the flavors in these extra generous portions, giving each dish time to develop on the wok. We like the Thai fried rice with shrimp, which gets a healthy downpour of fresh ingredients while it’s still on the heat.
They have a clean, comfortable environment where you can eat inside, but the food tastes just as good at home after a short drive. The friendly, accommodating staff have been serving families for years and make preparing our favorite dishes in the city look easy.
